We just finished having my friend from Texas stay with us for a few days. I love her a lot! This is a friend who has been able to visit me since I have moved away from Texas. She has seen the changes in our family from a couple to a family of four.
She is also a blessing in my life. Do you have a friend who speaks the truth over you? She encourages me with words from the Bible and does not beat around the bush. She prays for me and with me and with no judgment. She listens to my every struggle and fear and comes back with a verse from the Bible.
Wow.
Even though she has been to visit me often I felt even more BLESSED this time around. It was wonderful to have another girl around to share and to listen and not to mention, another helping hand with the kids! 🙂
Julianne is learning names so right off she said it but decided to call her “Honey, ” which was a highlight. I loved also that my friend had no fear to help me with teaching Julianne obedience too!
One of my love languages is hospitality and this comes with cooking, baking and making sure everyone is happy. When it comes to this, my friend is easy to please. I have to actually remind her to eat, which would be a nice reminder for me too. Even though I was not able to cook any real fancy foods or my typical meals I know that I was happy to have her with me and have a time to go to the movie theater with her.
This main meal has been a long time a coming. That is how it is said right? My husband finishes eating and says, “It has been a while we have had one of your delicious meals.” While this statement made me feel happy it also meant we were not eating out or eating leftovers.
I love simple meals like this especially if a part of it is prepared by my hubby. He came home from work to put these thighs on the grill outside.
The lovely thing about this recipe is that it is SUPER simple. As the chicken thighs are grilling, a vinaigrette is prepared, cooked brown rice is prepped, and a simple salad is shredded. This will definitely be a keeper!

Grilled Chicken Thighs with Basil Garlic Vinaigrette

Cook Time: 15 minutes
Grilled Chicken thighs
- 8 boneless chicken thighs
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 3 Tablespoons vegetable oil
Basil Garlic Vinaigrette
- 1/4 cup olive oil
- 3 teaspoons honey
- 1/2 teaspoon salt
- 1/4 teaspoon crushed black pepper
- 2 large garlic cloves, minced
- 1/2 lemon, juiced
- 1/2 orange, juiced
- 3 Tablespoons fresh basil, chopped
Instructions
Chicken Thighs
In a medium bowl, add the thighs and ingredients and mix well. Set aside for the grill. When grill is heated, place thighs on the grill and cook for 7 minutes on each side.
Basil Garlic Vinaigrette
Place all ingredients in a small bowl and mix well. Prepare beforehand so flavors can combine well.
