Disney Baby Giveaway

A few months ago I was invited, along with a few other bloggers, to NYC to preview the new items Disney Baby was launching in stores. We arrived in a fun-filled room with items from Monsters, Inc, Winnie the Pooh, Minnie Mouse, and Finding Nemo
I personally liked all the Minnie Mouse items but I guess that is because I have two girls. I have the little Stride Rite shoes below and I cannot wait for my 6-month old to wear them!
When we left the viewing we were given a nice swag bag with baby essentials perfect for me since I had my new baby.

Tuna Picadillo with Jasmine Rice
August 26th, 2013I have so many things to post but I have not been able to because I have been getting back into the swing of things at home. I have been so blessed having my hubby at home and having the girls spend a lot of quality time with him, but now the summer is over and he is starting teaching again.
What does this mean? Dinner planning comes in again. I have ALWAYS loved flying by the seat of my pants when it came to dinner planning. I would know what was in the pantry or fridge and I would come up with a meal.
I am back to carrying the baby during dinner time because that is when she starts getting fussy. I love that she gets quiet when I start cooking but now Julianne gets a bit jealous and has started to ask me to hold her too. Whoops. Some days are better than others and they end up playing well with each other.
In comes this meal. Ryan was and continues being impressed that I can spring up something completely new without a recipe for dinner. I enjoy making Cuban picadillo which is prepared with ground beef so I thought I would make something the Spanish make using tuna.
While I think this dish could be made using fresh tuna, it is easier using canned tuna for a quick weeknight dinner. I love that there are a lot of veggies in this dish too! I have been finding lots of ways to use the zucchini in dinner dishes so that the whole family can get a good dose.
This is also toddler-approved with a few “yummys” from her mouth. Love it! Add a green salad on the side and this makes for a great complete meal.
Tuna Picadillo with Jasmine Rice

Cook Time: 20 minutes
Ingredients (4 servings)

Instructions
Rice
Cook the rice according to packaged directions
Tuna Picadillo
Heat oil in a large non-stick pan. Add the first five ingredients and cook for 5-7 minutes. Add the tuna and continue cooking on medium high heat for 10 minutes.The mixture should start drying a bit. Add the cilantro, green olives, salt and pepper and cook for another 5 minutes.
Serve with rice and pircadillo on top.

Kyvan Soul Food: One Pot Turkey Sausage Jambalaya {Review + Giveaway}

When I was contacted by Sheila at Kyvan Soul Food Selections I knew I was going to be trying unique food products not to mention products developed by an NFL pro athlete, Reggie Kelly and his wife, Sheila. 🙂 What a plus!
The company name is a combination of their kids’ name and they were inspired to share their family recipes by pitching the idea to retailers which became the products they are sharing with us.
I first plunged into the Honey Apple Salsa pairing them with blue corn chips for a lunch and then by adding some on a breakfast omelette. I loved the flavors and contrast which made it a different salsa.
On to the BBQ sauce. We are Texans and although this sauce a little sweeter than I would have with a Texas BBQ, it went well with the Deconstructed BBQ Baked Potato. I cooked some chicken with a bit of Buffalo Chicken Rub and then let the cooked chicken heat with the BBQ sauce. I then cooked potatoes for 2 people and mashed it with some Earth Balance and olive oil.
Since I am taking a break from dairy I topped the dish with green onions and paired it with some oven-baked broccoli. I shared this with our toddler and she LOVED it. I love hearing her say, “nom nom, nummy!” She ate this dish really quickly too!
Another product that Kyvan makes is this awesome Blackberry-flavored Honey. I have been using this to add to our oatmeal and cream of wheat cereal in the mornings. It was so tasty!
My favorite product was definitely the Jambalaya Sauce. I once had a friend show me how to make it from scratch and I really liked and fell in “love” with Cajun food. Now that was a while back and I have not made it is a while so let me tell you how I made the QUICKEST Jambalaya ever!
I sauteed 6 links of turkey sausage with 1 1/2 cups of uncooked rice and two cans of kidney beans. I then added the jar of Kyvan Jambalaya Sauce and 3 cups of water. I added kosher salt and a bit of garlic powder. I cooked it for 45 minutes and it was finished! It was ready for our Sunday lunch.
Can I tell you again that this was toddler-approved? It was a tad bit spicy but I decided to take a risk and see if she would eat it. Sure enough she ate her little bowl. Yay!
How delicious does this look? I think it is ingenious to have a ready-made sauce which it makes it ideal for this busy mom to make a quick and delicious meal. Anyone could add shrimp, real sausage, or any other ingredients.
If you get a chance go to the website and check out the rest of their products. Most of them are all-natural, gluten-free, and even vegan!

My 6-month-old teether & her Jiggle Giggle™ Vibrating Teether {Review}
August 14th, 2013I simply cannot believe my youngest baby is already 6 months!! I realize after waiting to have one that each stage seems to move very slowly. After you have the second child it seems like it flies so much faster!! Beware moms of only 1 child. It flashes by so quickly.
My 6-month old is cutting her 2 bottom teeth and she is definitely my slobber monster. She does not fuss as much as my first daughter. I totally do not remember having to change so many bibs but Kathleen sure gets them soppy.
As a Nuby Mom Ambassador I get to pick fun products for my girls that are especially appropriate as they grow. I chose their Vibrating Teether to see how K would react.
Julianne (my 21-month-old) of course wanted to play with it but it was better suited for the new teether. I was sent the cute elephant with handles as ears. Kathleen sure did grab a hold of it quickly.
I was not quite sure she would bite on the nose and feel the vibration but sure enough I turned around to see and hear the vibrating teether being used. Score! This is perfect because I can now protect my finger from being chomped on by my little one.

Carlow Cookery: Seared Scallops with Fresh Pesto Sauce
August 13th, 2013Scallops cam be intimidating but with a cooking class they are the easiest and tastiest for any dinner. Cooking classes come in handy for specific food questions. Thanks to my husband for signing me up for this class on one of my birthdays.
I finally have a delicious and quick recipe for you despite being busy with my sister these last few days. We have been cooking but our days have been so packed with activities. How about a nice summer-like dish? This is quick and has a nice story behind it too.
A week and a half ago I finally redeemed my birthday gift my hubby had given to me back in March. I was going to learn how to cook scallops and I was going to taste the finished dishes with perfect wines. Mike Conti came and discussed the types of wines they were serving.
Let me start by saying that I have not had 5 glasses of wine in more than a year! It was wonderful tasting different types of whites and one red especially when it was coupled with shellfish.
I did not start eating scallops until we moved to Pennsylvania and I have enjoyed it a lot. During the class time, I learned the difference between bay scallops and sea scallops. You should always buy sea scallops FRESH! I have not had scallops so sweet as these before.
We started out the class with a Scallop Ceviche with a little slaw and it was paired with a Portuguese wine called Vinho Verde. It was kind of fizzy and is considered a non-vintage wine. It was a perfect pair!
The next dish presented was the Seared Scallops with Pesto Sauce. This was one of my favorite dishes especially when paired with the Pinot Noir by Grochau Cellars. One would not think a red would go with Italian or pesto but this had a delicious oak smell and depth to it. It was a perfect woody combination with the dish.
The third dish was already baking in the oven so when it was plated I could not wait to taste it. This was Southern-style Scallop Gratin and it was DELISH! I cannot wait to make this at home. It was placed on top of a rice cake that was so creamy. The pairing was a sparkling Chardonnay that was not my favorite. I learned that it was the only and first sparkling non-vintage wine made in Mexico.
The last dish was an Asian dish made with soba noodles and sesame oil. Yum! The scallops were grilled after it was quickly marinated with soy sauce. This was paired with a Sauvignon Blanc called Pouilly Fume’. It goes well with grilled fish and it was tasty! I loved the soba too.
I came home and knew I had to make the pesto and scallops for the family, especially since my sister has been visiting.
I seared the scallops until medium rare and decided to cook them in olive oil and a garlic butter. I let them rest on a dish before serving them. They were so delicious and sweet. I bought our scallops at Wegmans but now I am going to have to try our local fish market to compare.
How succulent do these look? If you ever get a chance, try a cooking class at Carlow Cookery. It was a perfect group of people surrounding a little kitchen within a shop. By the end of the night we were all laughing because we had a great evening.
Seared Scallops with Fresh Pesto Sauce

Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients (4 servings)
Pesto
Instructions
Bring a pot of salted water to boil. Cook pasta according to box directions until al dente. Reserve some of the pasta water for later.
Bring a saute pan to high heat. Season scallops with salt and pepper. Cook, turning once until golden brown and cooked through to the center. Remove from the pan and keep warm.
Add the basil, pines nits, cheese and garlic to the bowl of a food processor and puree.While the motor is running, drizzle in the oil until incorporated. Season with salt and pepper.
Toss with sauce adding a little of the pasta water to thin the sauce a bit. Serve topped with scallops.
