    Rhythm™ Dual Action Electric Breast Pump Review

    I received this product a little after my second baby girl was born. As you might not know, I am a brand ambassador for Nuby and I get a chance to review their products. I have been a little slow as of late because  it is hard to predict how a baby will respond to certain products.

    In comes a breast pump. Kathleen is my almost 5-month old and she has been quite different from my firstborn when it comes to bottle feeding. She officially took her first bottle a week and a half ago. It made it very hard to go out seeing she needed her mama.

    No problems! I was patient especially since I did not know how long it would take. I have been trying the last 3 months.



    Now comes in the lovely electric pump. It is nice and light and easy to clean and store. It is perfect for traveling and has the option to hand pump, which I have not needed to use. It even comes with a battery pack and an adapter for traveling purposes.

    Cons? Well I wish it was a dual pump and not one sided. It felt like it took forever but I like the rhythm of the pump and the way it cradled.

    Secret Recipe Club: Chewy White Chocolate Mocha Cookies

    I love this time of the month. I simply cannot believe that we are already in the second week of July. Craziness. This means I only have FOUR months before my toddler turns TWO! Cake planning needs to happen soon. 🙂


    July also brings the Secret Recipe Club, a group that monthly posts recipes from other blogs they were secretly assigned the previous month. SO exciting because I always discover new bloggers. Other people that love cooking and baking!

    This month I was assigned Kate’s blog Kitchen Trial and Error. While Kate holds and every day job she also loves to cook and bake. She also has a beautiful son who turned ONE last month. 🙂 Congrats! I love seeing other cooks with little ones. It makes me feel more balanced. 

    Chewy White Chocolate Mocha Cookies 2


    I love ALL of Kate’s recipes especially the SLEW of cookie recipes. CHOCOLATE cookie recipes. I do not think I have so many varieties either. Kate made Maria’s recipe from Two Peas and Their Pod called 

    Soft Gingersnap Cookies with White Chocolate Chunks. Even though they were Christmas cookies I loved the base of the cookie. I pretty much used the base and went another way by making them tasty for coffee-lovers.


    I hardly ever bake with white chocolate chips but I knew this recipe was calling me. I like soft and chewy cookies but I hardly ever make them. THESE were the BEST cookies I have had in a while and so was stated by my husband.

    Now I need to find someone to share these with cause they SO cannot stay in this house, not even in the freezer.

    Chewy White Chocolate Mocha Cookies

    Prep Time: 15 minutes
    Cook Time: 10 minutes


    Ingredients (3 dozen)
    • 1 cup unsalted butter, at room temperature
    • 1 cup granulated sugar
    • 1/2 cup brown sugar
    • 2 tablespoons olive oil
    • 1 teaspoon vanilla extract
    • 2 1/4 teaspoons baking soda
    • 1 teaspoon salt
    • 1 1/2 teaspoons cinnamon
    • 1 Tablespoon espresso powder
    • 2 large eggs
    • 3 1/2 cups all-purpose flour
    • 1 1/2 cups white chocolate chips
    Instructions

    Preheat oven to 350°F. Line two large baking sheets with parchment papers or with a silicone baking mat. Set aside.

    In the bowl of a stand mixer, cream together butter and sugar until smooth and creamy.

    Beat in the brown sugar, oil, vanilla, baking soda, salt, and cinnamon /espresso powder. Mix until well combined.

    Add the eggs, one at a time, and beat until smooth. Slowly add in the flour. Next, stir in the white chocolate chips.

    Scoop 1 1/2 Tbsp of dough into balls . Place on lined baking sheets, about two inches apart. Bake for 10 minutes, the cookies will still be soft. Remove from oven and let cookies cool on the baking sheet for five minutes. Transfer to a wire rack and cool completely.

    Bobby Flay’s Panzanella Verde

    I hope you had a great 4th of July! We finally had one day of sunshine plus LOTS of humidity, ugh! I thought we had left the whole lot back in Houston but evidently not! I was very warm but it was nice to grill food and  hang out with friends.

    Julianne had a great time too! She was all over the place playing with other kids, on the moonbounce and with other little toy cars.


    Kathleen played it cool and then had a nap. That is the way to go! Luckily there were lots of helping hands so Kathleen was definitely having a good time.


    Today I am sharing a yummy salad I made this week. I thought of making it for the party but then I decided to make a sun-dried tomato and artichoke hummus dip. It was fabulous if I might say so.

    So last week I saw Bobby Flay making this salad and I knew I was making it that night to go with our turkey sausages. I enjoy watching Bobby Flay’s Barbeque Addiction show. Now that we have a grill we feel like grilling all the time.

    Panzanella VerdeChef Flay took a traditional panzanella salad and raised it several bars adding a lot of green aspects thus giving its name, “Verde.”

    This was a quick preparation. So quick that Ryan was surprised that I had finished. I had started dinner preparation’s late so he thought we’d end up eating peanut butter and jelly sandwiches. Pish posh. We never do that!

    Anyway, this salad was super delicious we ate it all. It is a great way to get your greens in especially if you are growing your own basil. Oh yes. The dressing is the best part. Nice and creamy.

    Panzanella Verde

    Prep Time: 15 minutes
    Cook Time: 7 minutes

    Ingredients (4-6 servings)


      Grilled Bread
      • 5 slices of Ezekiel bread
      • Olive oil
      • Kosher salt and freshly ground black pepper

      Vinaigrette
      • 1/4 cup chopped fresh basil
      • 1/4 cup red wine vinegar
      • 1 clove garlic, chopped
      • Pinch sugar
      • 1/2 cup extra-virgin olive oil, plus more for drizzling
      • Kosher salt and freshly ground black pepper

      Salad
      • 2 cups baby spinach
      • 1 small English cucumber, quartered and diced
      • 3/4 cup pitted manzanilla olives
      • 1 tablespoon capers, drained
      • 1/2 cup fresh flat-leaf parsley leaves
      • 3/4 cup roasted sweet potatoes (optional)
      • Extra-virgin olive oil, for drizzling
      Instructions

      +For the bread+ 

      Heat a charcoal or gas grill to medium. Brush the bread with oil and season with salt and pepper. Grill on both sides until lightly golden brown. Remove, and cut into large dice. Set aside.

      For the vinaigrette
      Combine the basil, vinegar, garlic, sugar and 1/4 cup water in a blender and blend until smooth. With the motor running, slowly add the oil and blend until emulsified. Season with salt and pepper.

      For the salad
      Put the spinach, cucumbers, olives, capers, parsley and sweet potatoes in a large bowl. Add three-quarters of the vinaigrette and toss to coat the vegetables. Add the bread and toss to coat. Transfer to a large platter and drizzle with the remaining vinaigrette.. Serve at room temperature

      Progressively Perfect: Dark Chocolate Cream Pie with Berries

      Vegan Dark Chocolate Cream Pie

      Have you ever been involved in a progressive party? Do you know what it is? Each dish involved in a party is prepared by different hosts and hostesses. Appetizers are enjoyed in one house with some cocktails. Salads are then enjoyed at another home and then it keeps going from there. You get in your car and you enjoy your next dish with the next hostess.

      Love it? You should try it sometime. Why do I bring this up? Well, I have a virtual progressive party for you.  A whole bunch of ladies and cooks were assigned or they volunteered to create delicious dishes.


      Our theme was “Hot and Cold”.  You can only imagine what summer dishes can bring to your table. I contemplated making a chocolate chipotle cake or a chocolate peppermint cake but I totally changed my mind.

      Fourth of July is literally around the corner and I all I could think about was pie. Chocolate pie. This pie is eaten really cold with some fresh berries. I do not add whipped cream but that is ALWAYS an option for those who love it.

      Vegan Dark Chocolate Cream Pie

      The dessert takes 15 minutes to prepare and 2 hours to cool. Make it overnight and you will have a delicious pie. I wish these ladies could be here to enjoy it.

       
      Dark Chocolate Cream Pie with Berries

      Vegan Dark Chocolate Cream Pie

      Prep Time: 15 minutes
      Cook Time: 7 minutes
       
      Ingredients (12 servings)
      • 1 pre-made graham pie crust or pie crust recipe
      Chocolate Cream Filling
      • 2 cups So Delicious Original Coconut Milk
      • pinch celtic sea salt
      • ¼ cup arrowroot powder or cornstarch
      • ½ cup maple syrup
      • 1 Tablespoons vanilla extract
      • 2 cups dark chocolate chips 73% cacao
      • 1/2 cup fresh blueberries
      • 1/2 cup fresh strawberries, quartered
      Instructions
       
      Bring coconut milk and salt to a boil in a medium pot.
       
      Sift arrowroot powder into the pot, whisk vigorously by hand or with a hand blender for 2 minutes.
       
      Whisk in maple syrup and vanilla.
       
      Remove from heat and let stand for 1 minute.
       
      Add chocolate, stirring vigorously until completely melted.
       
      Chill in refrigerator for ½ hour until cool.
      Place in cooled pie crust and serve.
