I continue to relay my success in meal planning this week. Planning meals with a hectic schedule has really really worked and can only thank God for patience and a cool spirit. Yesterday, I kept on thinking I was going to have time to prepare my new dish, but a close rehearsal followed by my second MET HD viewing, proved to be a little tight for me. Ryan went in for a little nap while I decided that an 30 to 45 minutes would give me time to prepare said Pupusas. What are pupusas? Well, they are very much like the Mexican version of gorditas, which is a corn pancake filled with beans or cheese and baked on a cast iron skillet, but the Mexican version calls for the pancake to be opened and filled with a cabbage or lettuce salad. The pupusa is simply the pancake and served with a pickled cabbage salad called curtido.
I prepared the masa or dough, seasoned it, used canned refried beans, and made a broccoli salad on the side. I also decided to make a tomatillo sauce that I normaly make with flautas, or fried taquitos filled with chicken, but I added an avocado for a creamy consistency. Delicious! The only thing I was afraid of was that I was going to make enough but luckily we had the perfect amount before I headed out to watch Carmen at the movie theater. Success by a hair!
Today I was able to make 3 more pupusas for lunch, except I accompanied them with a green salad and used the Tomatillo-Avocado Sauce as a dressing! Two thumbs up!
Later in the day, I received 2 fun packages from the UPS guy. I received a bag of Hemp seeds from Bob Mill’s that I had won on Twitter.

I recently found out that alot of their products are VEGAN-friendly and delicious! We tried the Oatmeal Chews and Chocolate-Mint Cream filled cookies! Delicious. Go and try some of their products now, like their pretzels, popcorn, cookies, mints, etc.

Pupusas with Tomatillo-Avocado Sauce
serves 2 / 8 pupusas
Masa (Dough)
2 cups prepared masa harina (Prepared corn mix)
2 cups warm water
1 1/2 tsp garlic powder
1 tsp salt
1 tsp paprika
Filling
1/2 cup queso fresco (optional)
3/4 can vegetarian refried beans
1/2 tsp salt
1 Tbsp olive oil or coconut oil
In a medium bowl, place masa harina, salt, spices and mix well. Add warm water and mix until well blended.
In a cast iron skillet, heat olive oil or coconut oil on medium heat.
Take a 1/2 cup of dough and split in 2. Roll into balls and flatten each of them. Use one raw tortilla and add 1 tsp refried beans. You can also add 1/2 tsp cheese. Place the second raw tortilla on top of the filling and press the edges together. Repeat with the rest of the masa.
Flatten the patty until it is 1/2 inch thickness. Place on skillet and cook for 5 minutes on each side until a little browned.
Tomatillo-Avocado Sauce
makes 2 cups
1 1/2 lb. fresh tomatillos (green tomatoes with husks)
2 whole canned green chiles
1 jalapeno, partially seeded
2 cloves garlic
1/4 cup water
1/4 cup rice vinegar
1 Tbsp olive oil
1 tsp ground cumin
1/2 cup cilantro
Salt to taste
2 Tbsp lime juice
1 tsp sugar
1 avocado, seeded and peeled
Rinse tomatillos and cut in quarters. Slice and partially seed jalapeno.
Heat olive oil on medium skillet.
Place tomatillos, chiles, jalapeno, garlic and water in a blender. Add sauce to hot oil and add lime juice, salt, vinegar and cumin. Boil the sauce for 10 minutes.
Add sauce back to blender and add avocado and cliantro. Serve with pupusas!
