- 1 large piece of flank steak without removing the fat----> We had a 2.2 pound flank
- 4 lb Brazilian Sal Grosso (rock salt) ---> I used Himalayan rock salt
- 1 cup of olive oil
- ¼ cup of lemon juice
- ½ cup of chopped parsley
- ¼ cup of cilantro
- 2 soup spoons of fresh chopped garlic
- 1 soup spoon of dry oregano
- 1 soup spoon of red crushed pepper
- Salt to taste
- Prepare an open flame grill, charcoal or wood; a medium to high temperature is required and the flames must get very close to the meat
- Apply a generous amount of salt to the flank steak without rubbing it, the salt must be loose or the meat will be too salty.
- Take the meat to the grill and cook for about 5 minutes each side for medium rare, turning only once.
- Once ready, grab the flank steak with a large tongs and hit the meat with the side of a large knife to eliminate the extra salt.
- Let the meat rest for a couple of minutes before slicing it.
- Using a large chef knife chop the parsley and cilantro, move to a bowl and add all other ingredients.
- It can be used as a marinade for beef and chicken or as a sauce for the meat after grilled.
- The chimichurri can be refrigerated for about 2 weeks.

- 2 garlic cloves
- 3/4 cup fresh parsley, chopped and stems removed
- 1/4 cup grated Parmesan cheese
- 2 Tablespoons raw sunflower seed kernels
- 2 Tablespoons capers
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup olive oil
- 6-ounces chicken breasts (2 small chicken breasts)
- 9-ounce package frozen cheese-filled tortellini or ravioli
- 3/4 cup chopped sun-dried tomatoes (optional)
- 3/4 cup tomatoes, diced
- 2/3 cup red pepper, diced
- Place all ingredients in an immersion blender and blend until smooth.
- You can also use a food processor as well.
- Heat a medium non-stick skillet with 1 Tablespoon olive oil.
- Cook 2 chicken breasts, 7 minutes on medium heat. Let the chicken rest on skillet after heat has turned off and dice chicken into 1/2 inch pieces.
- Cook pasta according to package directions. Remove from pot after being cooked at cool.
- Toss pasta with pesto and add cihcken.
- Add the sun-dried tomatoes or fresh tomatoes and red pepper.
- Ready to serve at room temperature or great after being being chilled for 2 hours.

Texas de Brazil Flank Steak Brazilian Style and Chimichurri Sauce for Father’s Day
June 19th, 2015I know I am late posting a recipe idea for Father’s Day but better late than never. I finally got around to purchasing a nice flank steak since I know it is my husband’s favorite cut as well as mine. When I think about the type of meals we could get a restaurant at the end of the day meat and potatoes is the way to my husband’s heart.
Since I have a busy weekend, I decided to make a surprise dinner tonight in lieu of Sunday’s meal, but I have something planned for that day after church. Shh, don’t tell him!
Anyway, Texas de Brazil reached out and shared a recipe for me to share with readers. I was intrigued since I love going to Brazilian steakhouses but had not been to one in a long time. When I make my steak recipes I make my Chilean recipes and everyone loves them but I noticed that the recipe sent to me was super simple with a chimichurri sauce I had not tried before.
I prepared my potatoes for creamy mashed potatoes, prepared the chimichurri sauce, washed and prepared the salad and then lastly placed the flank steak on the grill all which was ready within the hour. Super easy and so delicious. YOU have to stop any menu plans and just make this meal because it is going to make your loved one melt. Simple but gourmet.
Make a nice green salad and your favorite mashed potatoes and you have a complete meal. Enjoy!

Fondant Art for Cupcakes with Cake Art by Amy

Last week I had an amazing Girls’ Night Out with a group of ladies at Cake Art by Amy in Collegeville. While I knew we would be decorating cupcakes, I thought we would be learning different way to ice and frost cupcakes but when I arrived I looked at the table set up for our group and was REALLY excited to find out we would be learning how to make fondant cupcake toppers.

It has only been a little under a year that I learned how to ice cupcakes through another class I took but I had not planned on learning any more until the far future. I loved the surprise and the intimacy of the class set up so we could all be watching each other learn. Before we started we had delicious appetizers and had delicious mini cupcakes prepared by Amy herself. There were so many flavors it was hard to stop at just one which was not an issue since they were MINI!

Before I share how exciting our class went, I want to share a little about Amy and her family’s passion for their business. After a being laid off from her job, Amy decided to pursue baking and started her business out of her home by upgrading her kitchen. Orders started piling in but as time went by, the need for a new space and the demand of customers required them to find a new place for their family. Check out their awesome Kickstarter video:

When I also find out that they have a heart to give back to their community and to the world I also was amazed by how much they wanted to be doing. It definitely makes a difference when you find out peoples’ passions when starting their business because it gives a unique perspective and a desire to support even more.

Now, how did our fondant class go?
We learned how to handle fondant and I learned how easy it was just to mold and craft it in different ways. Amy had different patterns and examples of fondant toppers we could replicate but she also encouraged us to create our own designs which many of us did. After an hour and a half of rolling various colors of fondant, cutting, folding, molding, Amy quickly showed us how to ice our chocolate and vanilla cupcakes, and we topped each cupcake with our handmade fondant toppers.
I have to say I was one proud fondant maker. I never realized I would be working with fondant any time soon but I left feeling like my time was so relaxing, therapeutic, and pleasant sharing with other women. Mini Ravioli Salad with Parsley-Caper Pesto
June 16th, 2015I have been really trying to make more salads and cold meals for dinner since the heat has started. The last thing I want is my oven going and making the house all hot. I never thought I would start overheating now in my third trimester of pregnancy. I have asked friends for recommendations for staying cool throughout the day and I have to admit it is very hard.
I am not one to stay indoors for long since I like filling my schedule with outings and errands but I have to admit that it has been extremely challenging having energy to do that now. All I want to do is to be in air-conditioning and enjoying cold drinks. My girls do not seem to mind the heat and would be happy playing outdoors but after an outing at the arboretum last week and landing with a 12-hour heat-related migraine, I learned the hard way. Stay inside as much as possible or at least in places that are cool.
When I was planning a dinner last week I came across a recipe in my box and decided it would be perfect for dinner. I noticed that the recipe was created by my husband’s friends who live in New Mexico who are fellow musicians who claimed it was one of his favorites so I thought I would surprise him by making it since it had been a while since he had this salad.
The salad consists of tortellini and grilled chicken and most importantly the pesto. I have not made our friend’s recipe before but I assumed it was just regular pesto which is basil-based but her recipe consisted of fresh parsley and capers which was amazingly delicious and different. The recipe took me 20 minutes to make and was ready to eat at room temperature or even consumed after 2 hours of being chilled in the fridge. While the original recipe called for sun-dried tomatoes, I used fresh diced tomatoes and diced red pepper which I liked.
While my girls did not like the pesto I had them take several bites to get used to the flavor but they were not convinced. I made extra grilled chicken and tortellini that I mixed with diced tomatoes and tossed with olive oil and Parmesan cheese which they then consumed. I give them a few more year to enjoy pesto but at least they tried it!
This salad would be great for a potluck or for a party this summer so make sure you try it!

As part of the Moms Meet network, I received the whole line of products to review and boy was I impressed! My whole family loved the line as we enjoyed it on our busy schedules.
Although our family are not ACTIVE athletes or sporty at the moment or even gluten-free, I was very intrigued by the integrity of the product especially with the goal that Ms. Hasselbeck had in mind when she created it. She could figure out the issues with her health until she went on a restrictive diet and found out that she was allergic to gluten. While I am thankful that I do not have any issues, I know these products would benefit our family with all the healthy benefits and ingredients.
There were a variety of protein bars that we were able to taste. The Hi-Protein Bar above contains 20 GRAMS of protein and comes in FOUR flavors:
This bar was created for those who love racing, have crazy long work schedules, or any person who are training. My husband had this bar on a day he was just running on a long schedule. While he liked the Chocolate Coconut flavor he tried he agreed he could not completely do the bar on an empty stomach.
Even though the bars have an ideal balance of protein, fat and carbs, the energy was received well with fantastic flavors.
The next set of bars we received are the No Gluten Paleo Bars ideal for those on Paleo diets. They are all natural and mostly composed of tree nuts and fruits and nothing more. I took these in my purse on outings with the girls and used them as snacks. Since they have been taking swimming lessons they get really hungry after their lesson and I have been splitting a bar between the two of them and they have really enjoyed them.
I really liked the Nuts About Tropical Fruit bar because it had dried mango, coconut, pineapple and a variety of nuts with dates. So tasty! Those bars only give about 4 to 5 grams a bar but they do the trick because the girls were full until lunch time.
Now many will know that I am constantly on the search for protein powders that will not lower my blood sugar when I replace it with a meal. It has been hard but I was glad that NoGii has one in their line that supplies 20 grams of protein per serving delivering a unique combination of two of the most nutritionally complete dietary protein through whey and quinoa. It definitely delivers the protein that people are searching through easily digestible ingredients especially since it contains probiotics and 7 grams of fiber.
