Supreme Grain-Free Pizza

Many of you do not know but our whole family was in Houston for 2 weeks but upon returning home, I only had 2 days of recovery time before I had to go to the hospital for emergency surgery for a ruptured appendix. NOT fun folks! Little did I know that I had been going through this issue while in Texas but did not feel like I needed to go to the doctor’s until we were back in town. It was good when I did because it could have been dangerous.
It has been a week since my surgery and the recoup time has been slow but I am super thankful for my mother-in-law for being able to help with the girls since Ryan has music camp to teach this week. I am not looking forward to 3-4 more weeks of recovery time but there is a reason why.
Now that my appetite is back I have been able to enjoy simple foods along with meals brought by friends from church. Until my full appetite comes back you will have to wait on NEW recipes coming soon. For now, I want to share a recipe I had tried and introduced to our family.
Pizza night is one of favorite nights at our house. We usually do not go out for pizza but we either make something at home or bring a pre-made pizza home to bake. Since I have been trying to go grain-free, I have been looking for recipes to try and make a permanent addition to our menu.
As I perused recipes on Pinterest I came across a recipe that was adapted from another recipe. I usually like trying the original recipe to see how different the adapted recipe, but in this case I did not have time. Julie from Savvy Homemaking made a delicious grain-free pizza that had me convinced I really did not need my regular pizza crusts.
When it comes to toppings I can pretty much put everything on a pizza and call it supreme. My husband would be happy with sausage, pepperoni, cheese, and black olives so sometimes I have to split toppings on a pizza. It all works really.
The grain-free pizza is made form coconut flour and requires cheese and egg whites but I divided my crust with almond and coconut flour and decreased the cheese added to the crust. The toppings are pretty any of your favorites and then dinner is served with a fresh green salad as a side. Give this pizza a try. You will not be disappointed.


Summer Series with GIANT Food Stores: Buy Theirs, Get Ours Free Challenge + Giveaway
July 8th, 2014Summer is here and it means probably larger groceries bills for families. Your kids are at home or you have family visiting which only means more mouths to feed. We usually concentrate on having more fruit in our home but other times we try to have a variety of foods in our fridge or pantry. How does one save on groceries?
GIANT is back with its Buy Theirs, Get Ours Free Challenge this summer and I have had a chance to try more of Giant’s products with brand name products. Each product I received is pretty much very equal in flavor and effective in its purpose.
All GIANT’s Own Brands products are subject to a testing program, which includes customer feedback, to ensure that the grocer is consistently delivering on quality, taste and value. Based on this testing, hundreds of Own Brands products have been reformulated in the past couple of years to improve upon taste and quality, while still offering affordable prices.
I also had a chance to purchase a few more items on my own to compare to the brand and I continued being surprised! The flavors of the food items quality of the non-food items was definitely satisfactory. The price difference is definitely lower with GIANT’s Own Brands than the brand items. Now even though I would not necessarily purchase all the items sent to me, it was really a great test the similarities and differences. Each GIANT product went through its own rigorous testing before it went on shelves.
I enjoyed taste-testing applesauce, ice cream bars, ice cream, and whip cream topping too. They were all very comparable and it did not hurt to know that the price difference was significant.

Beach Party at Chick-fil-A Downingtown

Summer is officially going at full force which means lots of activities for families all around. Whether it is a hot day or a rainy day you can always have a beach day, even indoors!
The Chick-fil-A at Ashbridge Square has a pretty exciting line up of activities for all the families in the area for July 17th. If you have not attended a family event at a local Chick-fil-A, then you are missing out.
Bring your kids and invite neighbors to have dinner at the Ashbridge Square location in Downtingtown and join in on their Beach Activities from 5pm until 7:30pm with the purchase of Chick-fil-A Kids Meal. What kinds of activities can you expect at such an event?

Houston’s Downtown Aquarium Review

As you might know we just returned from a two week trip visiting our families in Houston, Texas. It is where I grew up for 29 years of my life before getting married and it will always be a special place in my life. Now that I have children, all I think is sharing places my mother took me when I was young. Although, my kiddos are toddlers, I expect that most places are for older kids, but I also expect places to have something for the young ones.
Our first trip started with the Downtown Aquarium which I completely forgot I had never visited so it was going to be a new experience with my little ones. Since the summer has already become unbearable, finding an indoor experience was ideal. My mother came to help me and we quickly realized the space was really not ideal for strollers so we kept that in the car. Both my girls are mobile so there really was no reason to keep them in that especially since the place was crowded with groups of kids.
We had an All-Day Pass which gave us access to the Adventure Aquarium Exhibit, the Stingray Reef, and unlimited rides on Shark Voyage, Diving Bell Ferris Wheel, Aquatic Carousel, Lighthouse Dive, and Frog Hopper. It sure does sound like a lot for little kids 3 and under but the girls did really well.
We looked for Nemo and Dorie but then we introduced the girls to seahorses. We saw white tigers after going through the amphibian section of the aquarium.
We loved seeing the piranhas and even the jellyfish that changed color. There were huge aquarium with colorful fish and reefs. It was fun seeing my oldest pressed against the glass searching for her favorite fish.
We headed to Stingray Reef that was really neat! The stingrays were super friendly only to realize that they were holding out their fins for food. It was super cute but refrained from feeding although we pet the stingrays.

Next we went on the Shark voyage because I was very ready to see the sharks. The girls loved getting on the train anticipating our trip into the shark tunnel.
The train took us on a 10-15 minutes trek, stopping in the tunnel to talk about the types of sharks. The biggest surprise was the sawfish shark with the largest saw! It was amazing.
After we had finished the exhibit we headed outdoors to the carousel and the ferris wheel. The girls love carousels non-stop and so we enjoyed 3 rides changing on different animals.
The ferris wheel was another story. My mother does not like heights so I took my oldest on the ride and boy was it a fabulous ride. I could see all of downtown and more and I was surprised that my toddler was so quiet and still for the 15-20 min ride.
The other rides were for older kids so we bypassed those and had lunch by the Dancing Fountains where other kids were splashing in the bathing suits. It looked so refreshing.
The Downtown Aquarium is also known for their amazing dining experience. Even we did not stay for lunch there we took a peek at the area and were amazed! There was a 150,000 gallon aquarium surrounding the restaurant. The kids menu had lots of selections and looked liked a great place the keep everyone entertained. This will be a must-do for the future.
