- 4 Tbsp water
- 4 Tbsp butter, salted
- 1/2 cup zucchini, shredded
- 1/2 cup soft goat cheese
- 8 prosciutto slices
- 1 1/2 cups white button mushrooms, sliced
- 2 Tbsp butter
- Heat a large skillet on medium heat and melt 2 Tbsp butter.
- Add sliced mushrooms, salt and pepper to taste. Cook for 10 minutes and set aside.
- Heat another 2 tbsp of butter in nonstick skillet on medium heat .
- Whisk 2 eggs in a medium bowl and add 2 Tbsp water. Add a pinch of salt and pepper.
- Pour egg mixture on skillet and cook for 5-7 minutes.
- sprinkle 1/4 cup of zucchini over the egg as the omelette is cooking.
- The egg mixture will start expanding.
- Flip the omelette and cook for another 3-5 minutes and add 1/4 cup goat cheese on half the omelette, 4 prosciutto slices, and half the mushrooms and fold over.
- Repeat with the rest of the ingredients. Serve.
- 1 1/2 large baguettes, sliced in 1/2 inch slices
- 3/4 pound Jarlsberg cheese slices
- 1/2 pound honey ham slices
- 10 ounces guava paste, sliced 1/4 inch slices
- spicy mustard
- Turn on broiler to low and position rack closer to broiler.
- Slice the baguette into 1/2 inch slices.
- Add the slices to a baking sheet.
- Using a mini biscuit cutter, about 2 inches wide, cut out cheese slices circles.
- Add 2 slices to each baguette slice.
- Add about 2 Tbsp of honey ham slices.
- Add a slice of guava paste and top with 2 cheese circles.
- Place the baking sheet in oven and broil for 5-7 minutes.
- Cheese will bubble slightly and bread will toast slightly.
- Remove from oven.
- Add a small dollop of spicy mustard and top with another baguette slice.
Everyday Wear with Voyager Heels #EarthFootwear

Not many people know that I have flat-feet and that finding the right shoe for any event or every day use can sometimes be a big feat. While my husband likes me to wear heels, I have not been able to wear heels since having my first daughter. My ankles are weak and I have even twisted my ankle from not having the best supportive shoes.
My go-to outfits to mom’s night out or even to church usually consist of a black pants or skirt. When I find shoes or get the opportunity to shop, the shoes stay in my closet for a long time, so it is important to have something lasting and of good quality.

Earth Footwear came to my doorstep and at the perfect time since my last black shoes had started ripping after wearing them for 8 years. I started planning how I would wear the shoes to convince me that I had a new pair of stylish shoes. This pair of shoes belong to a modern collection of smartly styled casual footwear that combine a contemporary styling with all-day comfort.
The style shoe I received is called the Voyager and is part of the Fall/Winter 2014 Earth Collection. The shoes range at $85 to $200, with the majority of the collection under $100. The Voyager
I have never been one for shoe inserts so when I felt the latex cushioning layer inside the shoes, I was smitten. Even though I have been told to wear arch supports, for my flat feet, I have really never been consistent in wearing any because they have usually been uncomfortable. My goal has always been to find a well-made shoe that including the most comfort, even for when I am running after my children.
The Voyager style has elegant leatherwork details and can be dressed up or down for any occasion. I have to say, that this shoe looked very close to the previous pair I had in my closet so I was glad that I did not have to make any modifications to my attire or styling. A little more about the shoe:
Fridays are my day to work outside the house so I wore a nice black top with jeans and wore these shoes with some black dress socks. I felt casual but semi-dressed up especially with the shoes added to the mix. I officially have a pair of shoes that fit the modern dress casual style for every day use.
The hardest thing for me will be not to order the same pair in another color. The good fact is that there are 25 other heel styles to choose from to add to my small shoe collection. When I purchase shoes, it is one of the most important purchases because my feet require the best comfort and ankle stability.

Here are the deals for the following week. We had a chance to try the crackers, hummus, and bath tissue, chocolate chips and a few other products that ended up being a great experience. The flavors and quality of the products were fantastic. I am happy to report that I am sold on Own Brands based on my experience. Since we have a strict budget, having options for cheaper staple products is very helpful. Now I can come prepared knowing what products I want in my pantry.

Not only do you have my opinion but all GIANT/MARTIN’S Own Brands products are subject to a testing program, which includes customer feedback, to ensure that the grocer is consistently delivering on quality and value. Based on this testing, hundreds of Own Brands products have been reformulated in the past couple of years to improve upon taste and quality, while still offering affordable prices. If a product doesn’t pass these testing requirements, it doesn’t go on a GIANT/MARTIN’S shelf!

Farmers Zucchini Omelette

As I cooked the omelette, using only 2 eggs and a little water, I shredded some raw zucchini on the raw egg side. Once the other side was cooked, I flipped the omelette and the zucchini cooked. I then simply added the cooked mushrooms, a few slices of prosciutto, a few dollops of goat cheese and voila, my omelette was finished. It was the most filling breakfast I had and have now come to enjoy at least once a week.Ingredients

September 29th, 2014The weekends are usually really low-key for us and are focused on us having family time. I usually try to make more exciting meals or I get my family more involved in the kitchen. Sometimes, I am just plain tired and not even up to any cooking after a whole week of meals. Anyone feel the same? While my kids are not in school yet, my husband is back to school, as a professor, which means more prepared meals for my husband and easier meals for our family at home. The monotony of peanut butter and cold cut sandwiches are easily forgotten with fresher meals that make for memorable and satisfying meals.
Are you looking for a light lunch to send to your kids or even something light for a lunch on the weekends? Sometimes, cooking or baking is not even desirable but with a few ingredients you can have a pretty spectacular lunch that will have your family thanking you.
My kids love being the kitchen while my husband and I are cooking so I have been slowly involving our daughters more in our meal preparation. Even though we have 2 stools my youngest sits in the high chair closer to the kitchen counter and my oldest daughter uses a dining room chair to stand next to me. I am quickly learning that meal preparation does not work best when we are desperately hungry because no one will listen to directions and then start eating the food on the counter. Haha. Yes. I know. I hope I have given you a visual, because it has happened.
Let me tell you a story. On Sunday evenings, we would go to my Chilean grandparents home and have English tea with a huge spread of spreads, Chilean biscuits, dulce de leche, cheese, cold cuts, and more. It was considered a LIGHT dinner but it felt so satisfying and very much a dinner. It was spectacular and something I wish I were doing every Sunday evening. When I was thinking of a unique lunch to introduce to my family I decided to create a sandwich with the same flavors. I wish I could share it with my now deceased grandmother, because, I know I have inherited a part of her creative cooking skills.
When we got in the kitchen, I gave my oldest daughter, Julianne, instructions on her duties. Even though she wanted to taste everything she saw, telling her she was my helper made a huge difference. She was a huge helper loading up the layers as I cut the cheese, ham, and the guava paste. My youngest, who is only 20 months, wants to do everything her sister is doing. She feels left out so I really try to get her to be close to us so she feels included. As we are preparing our lunch, daddy is taste-testing ingredients as my girls are asking for samples. I love hearing Julianne tasting the guava paste and telling me “yum! I’ve never tasted before!”
This mini sandwich has starts with a baguette slice of bread with a layers of Jarlsberg cheese, honey ham, a slice of guava paste, and topped with another layer of cheese. The slice is broiled on low in the oven enough for the cheese to slightly toast. A little spicy mustard is added to another slice of bread and covers the mini sandwich. The sandwich was a sweet and savory hit! The spicy mustard gave a pop of flavor to the sweet guava paste melted between the ham and cheese. This was also very reminiscent of Spanish flavors that usually include Serrano ham. It was just so good and so hard to stop eating.

A Transitional Kupp’ for Toddlers {Review} #MomsMeet

If you are a new mom or simply a mom of young kids you know that you might have a love-hate relationship with all cups. From the start you know you have to find a baby bottle that your baby will accept and then when they get to the age they can drink on their own, just finding a perfect sippy cup can be a hassle. Soon you find yourself with a cupboard full of different cups and a husband that is frustrated every time he opens it. Oh yes. I know you know what I mean!
My girls are both now drinking from sports bottles and sippy cups but I have been taking my time training my oldest how to use a regular cup even though she has had time to use one when we are out. She has started asking for her smoothies in a regular cup and I have refraining because well, we have a younger toddler who gets into everything. I have been trying to prevent accidents and spills. Well. I can’t even prevent those.
What about glass cups? I have not even had my girls touch our glasses at all just because I do not think their little hands are coordinated yet but when I received the Kupp’ glasses in the mail, thanks to Moms Meet, I was real excited to see how my oldest would take to the style, color, and transition.
